Don Mateo de la Sierra Manso de Sahuayo is crafted by renowned master mezcalero Emilio Vieyra. Produced in LOT#7, the agaves are roasted in a traditional pit oven and fermented in wooden tanks. The distillation is done in a classic Filipino style alembique still made from pine and oyamel. The final product is balanced using only the purest natural spring water, without any additives.
