Don Rodulfo Juan Juarez crafted Mezcalero Special Bottling No.3 from wild Tobala maguey from the mountains of Rio Huiche, near San Juan del Rio. The agave were wood-roasted in a stone horno, mill-ground with a horse-drawn tahona & fermented using wild yeasts, then double distilled in a copper still. After two years of resting, this batch was bottled in June 2017 & yielded a total of 250 liters (480 bottles) with an ABV of 48.5%. Minerality from the limestone soil in which it was grown adds to its complex flavor.
